veal meatball

RECIPE INGREDIENTS 

• 1 kg veal fillet
• 70 g freshly grated parmesan
• 1 onion
• 1 clove garlic
• 1 egg yolk
• 50 g breadcrumbs
• 10 cl milk
• 1/2 bunch of herbs of your choice (parsley, coriander, sage, etc.)
• Salt, pepper

RECIPE PREPARATION
1. Soak the breadcrumbs in a bowl with the milk.
2. Cut the veal into cubes.
3. Peel and roughly chop the onion.
4. Peel and degerm the garlic.
5. Place the veal, onion, garlic, and herbs (keeping a few pretty leaves to serve) in the bowl of a blender and blend to obtain a mince. Pour into a salad bowl and add the drained breadcrumbs, parmesan, egg yolk, salt, pepper and mix.
6. Take 40 g of the mixture and form a ball between the palms of your hands. Do the same with the rest of the stuffing.
7. Heat the olive oil in a large frying pan and brown the meatballs on all sides for 20 min: they should be cooked in their center and golden brown.
8. Serve the meatballs very hot, decorated with a few herb leaves.
