Lactose-Free and Gluten-Free Cake

Ingredients

  • 300 g gluten-free flour (your favorite store-bought mix or homemade blend)
  • 200 g sugar
  • 1 tbsp gluten-free baking powder or leavening agent
  • 10 cl plant-based milk (almond milk recommended)
  • 6 cl olive oil
  • 3 eggs
  • Topping of your choice (lemon, vanilla, chocolate, fruits, etc.)

Instructions

  1. Prepare the dry ingredients:
    In a large bowl, sift the flour and mix it with sugar and baking powder.

  2. Incorporate the wet ingredients:
    Gradually add the beaten eggs, plant-based milk, and olive oil to the dry mixture. Stir well.

  3. Add the topping:
    Mix in your chosen topping (e.g., lemon zest, chopped fruits, chocolate) and stir until the batter is smooth and consistent.

  4. Adjust the consistency:
    If the batter feels too thick (like cookie dough), add a bit more plant-based milk until it reaches a soft, pourable consistency.

  5. Prepare the cake tin:
    Line a cake tin with parchment paper and pour the batter into it.

  6. Bake:
    Preheat the oven to 180°C (356°F) and bake the cake for 35-40 minutes. Check doneness by inserting a knife into the center—it should come out clean.

  7. Cool and serve:
    Let the cake cool before removing it from the tin. Slice and enjoy!

Tip

To store the cake, wrap it in aluminum foil or freezer bags. Defrost at room temperature for a soft and delicious texture. Enjoy your creation!
