Chicken, Grapefruit, and Avocado Salad

Chicken, Grapefruit, and Avocado Salad Ingredients

  • 1 small avocado
  • 1/2 grapefruit
  • 200g chicken or turkey
  • 1 bay leaf
  • 2 handfuls of green salad

For the dressing:

  • 1 tbsp vinegar
  • 1 tbsp olive oil
  • 2 tbsp rapeseed oil
  • 1 tsp mustard
  • Pepper

Instructions

  1. Prepare the vegetables:

    • Rinse the grapefruit and avocado.
    • Halve the grapefruit, peel it with a knife (removing as much white skin as possible), and cut it into pieces. Place the pieces and any juice in a salad bowl.
    • Halve the avocado, remove the pit, and slide your thumb under the skin to peel it off. Dice the avocado and mix it with the grapefruit and its juice to prevent browning.
    • Clean the salad greens, wash them thoroughly, and dry them. Add them to the salad bowl on top of the avocado and grapefruit, without mixing yet.
  2. Cook the chicken:

    • Heat a pot of water.
    • Once the water is hot, add the chicken (or turkey) breast and the bay leaf.
    • Cook for 10 minutes after the water returns to a boil.
  3. Make the dressing:

    • In a small bowl, mix the mustard and vinegar.
    • Gradually whisk in the olive and rapeseed oils, then add pepper to taste.
  4. Assemble the salad:

    • Once the chicken is cooked, dice it into small pieces and chill in the fridge.
    • Add the cooled chicken to the salad bowl with the other ingredients.
    • Pour the dressing over the salad, toss gently, and serve.
