Beef Chuck Roast

Beef Chuck Roast Recipe for 4 People Ingredients

For the roast:

1.2–1.5 kg beef chuck roast, bone-in

15 ml olive oil

2 onions, thickly sliced

For the broth:

175 ml  beef broth

60 ml  maple syrup

15 ml  Dijon mustard

5 ml  fresh thyme, chopped

2.5 ml  fresh rosemary, chopped

Salt and pepper, to taste

Preparation

  1. Preheat the oven:

    • Set the oven to 180°C.
  2. Prepare the broth:

    • In a bowl, whisk together the beef broth, maple syrup, Dijon mustard, thyme, rosemary, salt, and pepper.
  3. Sear the roast:

    • Trim excess fat from the roast. Heat olive oil in a thick-bottomed pot or Dutch oven over medium heat. Sear the roast for 2 minutes on each side until golden brown. Transfer to a plate and drain excess fat from the pot.
  4. Build the flavor base:

    • Pour the broth mixture into the pot, bringing it to a boil while scraping up browned bits from the bottom with a wooden spoon.
  5. Cook the roast:

    • Return the roast to the pot. Arrange the onion slices on and around the roast. Cover the pot and transfer it to the oven.
    • Cook for about 2 hours and 30 minutes, or until the meat is tender and easily shredded with a fork.

Side Dish Idea: Stuffed and Gratinated Potatoes (For 4)

Boil 4 medium potatoes with the skin on in salted water for 18–20 minutes.

Slice off the top third of each potato and carefully scoop out the flesh without breaking the skin.

Mash the potato flesh and mix it with:

  • 4 slices of cooked, chopped bacon
  • 2 chopped green onions
  • 30 ml sour cream
  • Salt and pepper to taste.

Spoon the mixture back into the potato shells and top with 60 ml shredded cheddar cheese.

Bake at 205°C for 15–20 minutes until the cheese is melted and golden.
