Ingredients:
½ cup maple syrup
½ cinnamon stick
3 whole cloves
½ cup rolled oats
1 cup water
2 tbsp light brown sugar
2 tbsp canola oil
½ cup whole-wheat flour
½ cup all-purpose flour
1 ½ tsp baking powder
¼ tsp baking soda
¼ tsp ground cinnamon
½ cup 1% low-fat milk
¼ cup fat-free plain yogurt
1 banana, mashed
Directions:
In a saucepan, combine maple syrup, cinnamon stick, and cloves. Bring to a boil, then remove from heat and steep for 15 minutes. Remove cinnamon and cloves.
In a microwave-safe bowl, combine oats and water. Microwave for 3 minutes, then stir in brown sugar and canola oil. Set aside to cool slightly.
In a separate bowl, mix flours, baking powder, baking soda, salt, and ground cinnamon.
Add milk, yogurt, and banana to the oats and stir. Beat in the egg, then fold in the flour mixture until just moistened.
Heat a nonstick pan over medium heat. Cook pancakes for about 2 minutes on each side, until golden brown.
Serve pancakes with warm maple syrup.
